At the heart of La Doria is a radically different approach to thermal management.
Instead of storing and continuously heating large volumes of water inside a traditional boiler, La Doria’s low thermal mass Flow-Through Heater heats water directly as it flows through the system.
Thermal energy is transferred rapidly and precisely to the moving water, while La Doria’s proprietary in-house algorithm continuously coordinates the heater, pump and flow meter.

From 37°C to 95°C — A New Extraction Spectrum.
Flow-through heating makes temperature a dynamic parameter rather than a fixed condition. La Doria can move from 37°C warm/cold extraction to traditional hot extraction up to 95°C on the same machine, opening an entirely new spectrum of coffee preparation.
At approximately human body temperature, 37°C represents a particularly fascinating extraction point, revealing a different sensory profile and delicate aromatic characteristics that conventional espresso technology was never designed to explore.
Precision to ±0.5°C.
Temperature is not simply selected — it is continuously measured and controlled. La Doria’s proprietary algorithm coordinates the Flow-Through Heater, gear pump and flow meter, processing almost hundred of data readings every second to dynamically regulate the extraction.
The result is temperature control with a precision of up to ±0.5°C, together with highly accurate management of pressure and flow.

Temperature, pressure, and volume can be precisely managed to create individual brewing profiles for different coffees, origins and roast styles. For specialty coffee roasters, it provides the flexibility to develop and fine-tune the ideal recipe for each coffee — bringing out its unique character, exactly as intended.

Because water is heated dynamically, the machine does not have to remain tied to one boiler temperature.

The same philosophy extends beyond coffee extraction.
La Doria generates steam on demand, with precise control over temperature and moisture characteristics. The operator can select three different steam moisture levels — Wet, Medium, or Dry — according to the beverage, milk texture, and desired result.
The system is engineered to deliver immediate and stable steam performance, maintaining consistency even during continuous operation exceeding one minute.
